Lemon Blueberry Skillet Oatmeal



Lemons and blueberries are a match made in heaven.

This skillet oatmeal is creamy and rich but also very refreshing.

This recipe calls for frozen blueberries.  If you use fresh you may need slightly more water .

This oatmeal uses the base recipe for oatmeal and adds in sweet and tangy blueberries and a burst of freshness from the lemons. The vanilla is left out however you can add it in if you would like.

Once you are done you are left with a beautiful purple oatmeal.

Ingredients
4 cups oatmeal
½ cup brown sugar or equivalent of preferred sweetner (if you prefer subtly sweet start with ¼ cup and adjust as needed)
½ stick of butter (can sub 1/2 cup coconut oil if you prefer)
4 cups water (can trade some of the water for milk or cream for added richness and protein)
Zest from 1 lemon
Juice from 2 Lemons
12 oz frozen blueberries- Note : I used ½ a 24oz bag. If you have a 16oz bag you can use the whole thing if you don’t want to measure 🙂


Directions

To a large skillet add butter (or coconut oil)
Once your butter has melted add your brown sugar or other preferred sweetener
Once the butter and sugar have combined add in the frozen blueberries
Stir well
To the pan add the Zest of one lemon
Squeeze in the juice of two lemons
Stir well

Continue to cook until mixture is bubbly
Turn off heat
Add in oatmeal. I suggest adding half mixing well and then adding the rest.

Now add in your water. Add about 2 cups of the water in and mix. If using milk or cream add those now before any water.

Now the recipe calls for 4 cups of water however Once the first two cups of liquid are added in slowly add the remaining water. Depending on how much juice the blueberries released (and your preferred consistency) you may not need the full 4 cups of water.

Cook until the oatmeal is creamy and thick.

Remove from heat and let stand for 2 to 5 minutes before serving.

Notes:

If you need to be dairy free use coconut oil instead of butter . You can use a can of coconut milk in place of some of the water for added richness

If you are on a low idoine diet see my version of this recipe that is dairy free.

If you are following a plan like THM use sugar substitute of choice. This would likely fall into the crossover category due to the coconut oil.
