Lemon Blueberry Skillet Oatmeal- dairy free

This skillet oatmeal is creamy without a ton of dairy

This recipe calls for frozen blueberries.  If you use fresh you may need slightly more water .

This oatmeal uses the base recipe for oatmeal and adds in sweet and tangy blueberries and a burst of freshness from the lemons. The vanilla is left out however you can add it in if you would like.

Once you are done you are left with a beautiful purple oatmeal.

Ingredients
4 cups oatmeal
½ cup brown sugar or equivalent of preferred sweetner (if you prefer subtly sweet start with ¼ cup and adjust as needed)
½ cup of coconut oil
4 cups water
Zest from 1 lemon
Juice from 2 Lemons
12 oz frozen blueberries- Note : I used ½ a 24oz bag. If you have a 16oz bag you can use the whole thing if you don’t want to measure 🙂

Optional : dash of non iodized salt



Directions

To a large skillet add coconut oil
Once coconut oil has melted add your brown sugar or other preferred sweetener
Once the coconut oil and sugar have combined add in the frozen blueberries
Stir well
To the pan add the Zest of one lemon
Squeeze in the juice of two lemons
Stir well

Continue to cook until mixture is bubbly
Turn off heat
Add in oatmeal. I suggest adding half mixing well and then adding the rest.

Now add in your water. Add about 2 cups of the water in and mix. Now the recipe calls for 4 cups of water however Once the first two cups are added in slowly add the remaining water. Depending on how much juice the blueberries released (and your preferred consistency) you may not need the full 4 cups of water.

Cook until the oatmeal is thick and creamy.

Remove from heat and let stand for 2 to 5 minutes before serving.

Note

This oatmeal  recipe is compatible with a low iodine diet as long as you use non idolized salt. Read the labels of every product you buy because sometimes there are sneaky ingredients that would not be compatible.

This recipe is also dairy free, soy free, and egg yoke free. Vegetarian friendly.
