Apple Pie Skillet Oatmeal- Dairy Free Version

This skillet oatmeal is creamy without any dairy.


This oatmeal uses fresh apples and optional but yummy walnuts.

Once you are done you are left with a beautiful oatmeal that tastes like dessert

Ingredients
4 cups oatmeal
½ cup brown sugar or equivalent of preferred sweetner (if you prefer subtly sweet start with ¼ cup and adjust as needed)
½ cup of coconut oil
4 cups water
Juice from 1 Lemons
2 large apples or 3 small/medium ones diced into bite size pieces
Pinch of non iodized salt
Optional : raw chopped walnuts or other nuts of your choice

Directions

To a large skillet add coconut oil
Once coconut oil has melted add your brown sugar or other preferred sweetener
Once the coconut oil and sugar have combined if using nuts add in now and allow to cook for 2 to 3 minutes stirring continuously
Add apples to pan
To the pan squeeze in the juice of one lemon. If you want some extra lemon flavor you can also add some lemon zest too.
Stir well.
Turn off heat
Add in oatmeal. I suggest adding half mixing well and then adding the rest.

Now add in your water. Add about 2 cups of the water in and mix. Slowly add in the remaining water and continue to mix.

Cook until the oatmeal is thick and creamy.

Remove from heat and let stand for 2 to 5 minutes before stirring .

The apples cook down but still retain some firmness. If you want softer apples cook them down prior to adding to pan.

Note
This oatmeal recipe is compatible with a low iodine diet as long as you use non idolized salt. Read the labels of every product you buy because sometimes there are sneaky ingredients that would not be compatible. Also if you are using nuts you must read the labels. Raw unsalted are best.

This recipe is also dairy free, soy free, and egg yoke free. Vegetarian friendly.

If you are following THM use preferred sweetener in place of sugar. This would fall more into crossover territory than E because of the coconut oil.
