Apple Pie Skillet Oatmeal

Apple pie oatmeal

This skillet oatmeal is creamy and rich.

This oatmeal uses the base recipe for oatmeal and adds in sweet apples and optional but yummy walnuts. 

Once you are done you are left with a beautiful oatmeal that tastes like dessert 

Ingredients 

4 cups oatmeal

½ cup brown sugar or equivalent of preferred sweetner (if you prefer subtly sweet start with ¼ cup and adjust as needed)

½ stick of butter (or 1/2 cup coconut oil if you prefer

4 cups water (can substitute milk or cream if you prefer for added richness and protein)

Juice from 1 Lemons

2 large apples or 3 small/medium ones diced into bite size pieces

Pinch of salt

Optional : raw chopped walnuts or other nuts of your choice

Directions 

To a large skillet add butter

Once butter has melted add your brown sugar or other preferred sweetener

Once the butter and sugar have combined if using nuts add in now and allow to cook for 2 to 3 minutes stirring continuously

Add apples to pan

To the pan squeeze in the juice of one lemon. If you want some extra lemon flavor you can also add some lemon zest too.

Stir well.

Turn off heat

Add in oatmeal. I suggest adding half mixing well and then adding the rest.

Now add in your water(or milk). Add about 2 cups of the water in (or milk)and mix. Slowly add in the remaining water and continue to mix.

Cook until the oatmeal is thick and creamy.

Remove from heat and let stand for 2 to 5 minutes before stirring .

The apples cook down but still retain some firmness. If you want softer apples cook them down prior to adding to pan.

Note 

This recipe is soy free, and egg yoke free. Vegetarian friendly.

If you are following THM use preferred sweetener in place of sugar. This would fall more into crossover territory than E because of the butter.
