I love beef stew.
Even in July heat here in Florida I love it.
My family and I prefer hot food no matter what the temperature is outside.
I also like food that is low maintenance.
I do really like to cook but I have a busy toddler so minimal prep is a must for me in this stage of life.
I made this in my stockpot. You could probably toss everything indy a crockpot but I prefer beef stew made on the stove top.
This is a minimal prep recipe. No need to overcomplicate food in order to have a good meal.
Ingredients:
1 stick of butter
Olive oil
Stew meat – my package was almost 5 pounds. Feel free to use less if you want a more broth heavy meal.
2 containers of broth of choice – I uses chicken because I ran out of beef. I used 1 to cook with and 1 will be used for Leftovers ( I’ll explain)
2 large onions
1 16oz bag of baby carrots
1 bag baby potatoes
Salt
Pepper
Garlic powder
1 packet seasoning
Directions:
In a large add 1 stick of butter, chopped onions and coat with olive oil.
Cook until onions are translucent.
Add in stew meat and add in broth.
I only used one but you could use two if you want more broth.
Cut baby potatoes in half and add to pot.
Add baby carrots to pot.
Season to your liking with salt pepper and garlic.
Bring to a boil then reduce to a simmer for an hour to an hour and a half.
Optional but a small pat of Irish butter is a wonderful way to serve this.
Note about the broth
I used 1 container because that’s what I had. My kids are mixed on eating with the broth and without after serving there was minimal broth left. It was easier to put Leftovers away with less liquid. To reheat as stew for another meal another container will be used.
