This egg recipe is compatible with a low iodine diet as long as you use non idolized salt. Read the labels of every product you buy because sometimes there are sneaky ingredients that would not be compatible.
This recipe is also dairy free, soy free, and egg yoke free.

Egg and cheese are a magical combination.
But what happens when you are on a restricted diet or have an allergy ?
A little modification is the secret to not missing out of yummy foods while needed to restrict certain ingredients.
This recipe uses some simple work around to get the yummy flavor but not the ingredients we are trying to avoid.
Ground pork sautéed with onions and spices tastes similar to sausage. I didn’t due to taste preferences but you could add even more seasoning and make it taste even more like regular sausage.
Braggs Nutritional Yeast gives the “cheesy” part with no dairy!
Ingredients:
32 oz carton of egg whites ( I used Aldis brand)
One 16oz package of Aldi Never Any Ground Pork
1/2 cup Braggs Nutritional Yeast
1 large white onion diced
Olive oil
Optional : a few sprigs of Fresh Thyme
If you like sweet sausage option brown sugar or maple syrup approximately 1/4 cup
Directions:
Preheat oven to 325 degrees F
In a large skillet add a generous drizzle of olive oil
Add ground pork to pan and brown

Once pork is starting to brown add diced onion to pan
Cook until pork is cooked through
Add pork and onions to large mixing bowl
Add nutritional yeast
Mix well

If you like your “sauage” to be sweet you can add some brown sugar or maple syrup to your likeness at this step
To the mixture add full carton of egg whites

Line a large baking sheet (with sides) with Parchment paper.
Pour on egg mixture trying to make sure meat is evenly distributed across pan

Bake in the oven for approximately 20 minutes or until eggs are fully cooked

Allow 2 minutes to sit before serving.
If you prefer egg cups this recipe can be made into egg cups as well. Will make about 24 standard size egg cups.
If you don’t want to use pork use any ground meat of your choice just check the label!
