Pancakes: Regular with a dairy free option 

Pancakes are by far one of my kids favorite foods.  They would eat them for any meal of the day,  even as a snack of I would let them. One recent weekend day as usual that was the requested breakfast .  I  went into the cabinet to grab my trusty box of complete pancake mix only to find the box was almost empty .  I was pretty sure that I had what I needed on hand to make  them from scratch so I grabbed my phone and searched for pancakes .  I looked at a few different receipes and found one from Martha Stewart Easy Basic Pancakes that looked easy enough,  plus everything Martha Stewart is good so I decided I had nothing to lose.

I tried the receipe out and for my first attempt at it they turned out pretty good.  I used to struggle even boxed pancake mix so I was pretty proud of myself.  The only problem . . I  couldn’t have any because the receipe had my milk.
I turned to Facebook to ask the question about dairy free pancakes .  I got advice on using almond milk and how to make them fluffy.

The next morning I was on a mission .  I so badly wanted pancakes and was determined to have them.  Here is what I came up with using the Easy Basic Pancakes as my reference .

Dairy Free Pancakes

Ingredients :

1 cup flour
1 tbsp baking powder (slight increase from other receipe to make more fluffy)

2 tbsp  sugar

.5 tsp salt

1 egg

2 tbsp oil
1 cup almond milk

Optional :

Cinnamon

Vanilla extract

 Directions :

Mix dry ingredients and wet ingredients in separate bowls.*

Add dry ingredients slowly to wet ingredients

Once mixed pour desired amount of mix into hot oiled pan ( I usually use about 1/4 cup

Once bubbles appear on the top flip

Repeat with remaining batter

* I have when in a rush added everything into one bowl.  This will work however will be a little harder to mix properly

I usually top with maple syrup .  They are very good with a banana cut up on top.
