Teriyaki Coconut Turkey

This is a simple recipe perfect for leftover poultry.  I used turkey but chicken would be wonderful too.

Ingredients

Leftover meat of choice shredded or in bite size pieces

One can of coconut milk

One 14-16 ounce bottle of teriyaki sauce

Lime wedges (optional but recommended)

Directions

To a large skillet add one can of coconut milk ( shake first)

To the skillet add one bottle of teriyaki sauce

Stir together and let the mixture cook for a few minutes

Add in shredded meat. I used about 2 pounds of leftover turkey but you could add more or less

Let cook until heated through. Mine took about 10 minutes on medium heat.

Serve as is or over rice or noodles.

Optional but recommended squeeze lime over the cooked meat

I added sesame seeds but they didn’t really add anything flavor wise but looked pretty 🙂

I didn’t have plain rice so I served with this rice from Aldi. It was really good.
