Using up leftovers – Taco style turkey and rice bowls

This little pack of rice can turn leftover meat into a quick yummy meal in about ten minutes.

I like to make a lot of my food from scratch. However I also have five children and an incredibly busy life. Keeping a few of these in my pantry makes it much less likely that I find myself in a drive thru or ordering a pizza on a crazy day.

For a taco style bowl I use the Spanish rice. However the beauty of these rice packets is you can mix and match your ingredients and make something totally different using the same basic idea.

I cook my rice according to the package.

While my rice cooks I heat up my leftover meat on the stove. I used turkey but anything you have leftover would be fine.

My kids are in different places with their food preferences. Since I don’t want to be a short order cook every night I serve most meals deconstructed. My deconstructed I simply mean I serve all the components separately. Those who want to mix mix…those who don’t don’t. Easy peasy

One of my kids decided to eat it on bread like a burrito since I had no wraps. She thought this may be the better version 🙂

I served with cheese. You can also add any taco topping you like.
