Sheet Pan Leftover Stew Meat and Veggies

I love buying stew meat from Costco. I have a family of 7 and Costco pretty consistently has the cheapest stew meat.Ā  The packages are pretty big, usually at least 5 pounds.

This leaves plenty of leftovers even with a family my size especially is anyone decided that night they don’t like stew beef.

So what do you do with it?

There’s lots of great options but if you want something you don’t have to fuss with much this dinner is great.

Heat your oven to 375.

To a sheet pan add some frozen veggies. Fresh would probably work too but I have not personally tied. Frozen veggies are much more friendly in terms of using before they go bad šŸ™‚ season as you’d like. I did salt pepper and garlic.

On top of the veggies add your stew beef and butter. How much butter? Let your heart decide! I added one stick cut up over the sheet.

Mine was cooked and ready in about 15 minutes. It’s ready when the meat is fully warmed and the veggies are no longer frozen.
