Breadless Monte Cristo

Spiral ham is one of my daughters favorite meals. This time of year I love to buy a few while they are on sale.

My favorite way to cook is to simply toss in the slow cooker for 3 to 4 hours on low.

Just like with my turkey I try to get every bit of meat off the bone.

You end up left with some more scrappy pieces that can be a little harder to use or at the very least less appealing to look at in a plate without a little jazzing up.

I recently had a Monte Cristo sandwich at a local restaurant.  While very good bread and I just simply don’t mix well anymore.

I was craving another,  but I didn’t want the bread I wanted the salty sweet.

Last night while wandering Aldi for therapeutic purposes I spotted a jar of Raspberry jelly and instantly knew how to satisfy that craving.

I made a breadless Monte Cristo.

I heated my oven to 350 and foolishly lined my pan with foil. Parchment paper would have been the way to go.

To my lined pan I put some of my pieces of ham together.

On top of the ham I added some sliced gouda cheese.

I popped that in the oven for a few until the cheese was nice and melted.

This would have been yummy as is but to satisfy my salty sweet craving I topped with Raspberry jelly.

I added two spoonfuls then spread across the ham and cheese.

I wanted the entire thing to be warm so I stuck this back into the oven to warm the jelly.

This was so good.  Warm, sweet and salty.

If you prefer bread this could be added to some toasted bread or prepped like a grilled sandwich.
