This week has been one for the books. Sick kids since Saturday. Routine was something to just think about and laugh this week.
Tonight dinner was not looking good. My husband was out picking up our older daughter. The toddler didn’t nap so was in chaos mode. As dinnertime approached I regretted my declaration that I would no longer be buying chicken nuggets anymore because they would have come in handy in moments like these.
I convinced my teenager to keep track of the little one long enough to gather up some ingredients and fortunately for all of us a tasty and almost as simple as frozen chicken nuggets came together rather quickly.
Not fancy but very tasty sheet pan leftover turkey and green beans saved the night.
I preheated my oven to 350.
To the sheet pan I added a whole bunch of frozen green beans. They did have a change to defrost a touch because I was interrupted while prepping dinner.
I tossed on a little olive oil , salt and pepper and a touch of Cajun seasoning.
I toss on the leftover turkey I had made the other night. I just used my hands and torn it up into smaller easier to work pieces.
I then cut up and entire stick of butter and put into the meat.
I let this hang out in the oven until the kitchen started to smell fantastic. I forgot to time it but I would guess no more than 15 minutes.
After I took the pan out of the oven I tossed everything around a little and added the salt and pepper I forgot to put on the turkey 🙂
This was a great filling meal. It would also work with other leftover meat like chicken.
