Made a bad batch of crockpot chicken? Yeah me too..in fact every batch of crockpot chicken I make turns out ok at best.
So what do you do?
Turn it into chicken salad!
Now obviously not every kind of crockpot chicken you make would be a good chicken salad…or maybe it would but I’ve never made chicken salad with say chicken cooked in a tomato sauce ( would probably be an OK taco with enough cheese added though) or say chicken pot pie style…
But with say plain chicken or teriyaki chicken..even BBQ …. you could make this into chicken salad.
All you need is a fork to shred up the chicken and some mayo. Should you want to get fancier just pair flavors that work with the flavor chicken you cooked.
Plain chicken? Blank canvas add what you want.
Teriyaki? Onions would be good. Pineapples amazing in my opinion.
BBQ… add some apples.
Last night I really don’t know what I was going for. Admittedly I knew dinner time would be crazy so I just needed to make something. I tossed the chicken in with salt pepper garlic dehydrated onions. Then I toss in some brown sugar and butter. Didn’t go as planned… I did not want to heat it up again but I didn’t want to waste it either.
To a bowl I tossed in some mayo , more dehydrated onions ( I wouldn’t do again they are bit crunchy in not a good way) some salt pepper and brown sugar.

Then I dumped in my leftover chicken and started to mix. I needed up needing more mayo because it was too dry so I added more and mixed .

I served with a cut up apple. I don’t like to add my apples in ahead of time as I don’t want them to brown and I want them nice and crispy…the good kind of crispy.

I ate it straight out of the bowl like this since my little guy woke up before I was done. Pretty good…minus the onions!
