Recipe review : Melt-In- Your- Mouth Chicken from Delish

I am not a gourmet chef…. I wish I was a foodie but I am not quite there yet. I’m a busy Mom of 5 kids who needs simple but good recipes that are different from what we ate last night but not too different from what we know and are familiar with…. if that sounds like you keep on reading.

So far everything we have tried has been good and it’s cheaper for the year than pizza is for a single dinner so I’m a fan.

This link above is for the Melt-In-Your-Mouth Chicken. I have had variations of this before. I was low on inspiration meal planning the other day and the picture for this recipe caught my eye.

I made twice as much of the sour cream and mayonnaise topping because I always wish they was more. I thought coating the bottom of the pan with it would help…. the verdict is out on that.

It was pretty easy to prep. If you’ve never made before use the green shaky can of parm for this not the fancy kind in the cheese section. Trust me in this one.

Flavor was really good. The texture of the chicken was Meh. For some reason my chicken came out really chewy. I am not sure what went wrong… I may take the time to butterfly it before hand next time but it was still good and everyone ate it with about the normal amount of dinner time complaints you can expect from kids who for any meal would always prefer chicken fries or boxed Mac and cheese.

I served it with some Roasted vegetables. I cooked about 2 pounds of zucchini, one onion, and a package of cherry tomatoes.

I would definitely make this again. It is cost effective ( probably around $15 and I got more than 1 meal from it). My kids liked it and I think with a little tweaking to prevent chewy meat it would be even better .

Now what to do with the leftovers….

The obvious answer is just reheat and eat again as is. However if you are like me and like to repurpose your leftovers here is what I did.

Cut the chicken into smaller bite size pieces.

Add to a hot Skillet.

Once the meat starts to sizzle add in the Roasted vegetables.

Take some heavy cream and circle the pan a few times.

Add several handfuls of Spinach and cook down. Optional but it was yummy.

Toss a few generous pinches ( or handfuls no one is judging) of the not green can parmesan cheese in.

Liberally add black pepper.

This was eaten just like this but you could add on top of pasta or rice if you would like.

Still have extra Roasted veggies?

Try this

Heat Skillet.

Add in Roasted veggies. Mine did not require any extra fat to cook with because there was oil from roasting but add a little if needed.

Once heated remove from pan.

Add as much butter as you like to fry eggs in.

Cook eggs to your liking..I did mine overeasy.

Add to top of veggies.
