I wish meatloaf was called something else.
For some reason it has never sounded that appetizing.
Fortunately despite a less than wonderful name it is pretty easy to make and really good.
One of my favorite things about meatloaf is it is pretty adaptable. You can very easily change up the flavors and even the kind of meat used.
For this meatloaf I used 80/20 ground beef and one package of rolled sausage.
Into a mixing bowl I added 3 pieces of white bread that I ripped up.
I added enough milk to cover the pieces of bread which was about half a cup.
Into the bowl I added 3 whole eggs.
I mixed this into it had the consistency of custard.
Add some salt and pepper.
Next I added the meat into the bowl and mixed with my hands until completely incorporated.
I lined my baking sheet with foil and added the mixture onto it. With my hands I formed the meatloaf into a long rectangle.
If you don’t like bacon or don’t have any you could stop here and bake.
Since my kids love bacon I took one package of bacon and covered the top of my meatloaf with it.

I baked at 350 for about 45 minutes until my meat was cooked completely thru.

I served with potatoes and corn courtesy of the KFC drive thru since I didn’t plan well 🤷♀️
3 of 5 kids ate this meal with virtually no complaints so it was a winner in my book. 1 just wanted to eat bacon not meatloaf and 1 isn’t allowed to eat solids yet 😊.
