Sheet pan sausage peppers and onions

Sausage peppers and onions are one of my favorites. I cooked this on a sheet pan. You can absolutely do in a crockpot and I have. It works well the sausages just don’t get crispy ( although a quick trip under the broiler could probably fix that if you prefer crispy).

Here is the cost from shopping at Aldi

3 packs of Italian links @ $3.99 each for a grand total of $11.97

Peppers $3.29 for 3 count bag of multi colored peppers . This is the instacart price ( could find my receipt 🤦‍♀️)

Red onions on instacart at $3. 29 for a two pound bag. I used 2 onions but you can use as many as you want. Any onions you have would work just fine.

A time saver I like to keep on hand is frozen peppers and onions. A Pepper blend bag is about $1.89. The texture will be slightly different but not enough to stress over. You could try to remove the moisture if you wanted but I never bother.

Buns .99 for basic hamburger buns if you choose to serve on a bun.

Cut peppers into desired size and put on foil lined pan ( makes for easier clean up but optional)

Cut onions and add to pan.

Arrange sausages on top of vegetables.

Put in 350 degree oven for 45 minutes or until sausages are crispy and cooked thru.

Here is what our sheet pan looked like when fully cooked. I checked the temperature with a meat thermometer.

Serve alone or with a bun. You could also serve over rice or pasta.

My family ate about the sheet pan. I cooked extra because leftovers are a busy mammas best friend.

Here are some suggestions to help use up your leftovers.

Just eat it exactly the same way reheated.

Add some canned tomatoes or a jar of sauce to the mix. Serve on bread, rice, pasta or as is.

Dice and eat with eggs.

Use as the filling for a quesidilla .

Mix in some shrimp and rice.

Mix in some chicken and rice.
