Busy Moms Slow Cooker Mongolian Beef

I was going to call this Lazy Man’s Slow Cioker Mongolian Beef because this was my short cut version because I don’t have time in this season of life for lots of extra steps…. with 5 kids ( one being only 7 weeks old) I need it to be fast and painless. I decided instead to call it Busy Moms Slow Cooker Mongolian Beef because I am anything but lazy… I just don’t have enough hours in the day.

I used a beef roast for this recipe. No prep work required just out of the package into the slow cooker. I love using roasts in the slow cooker. After being cooked all day they are nice and tender as well as being more friendly on the wallet than some other cuts.

Beef roast straight into slow cooker

We moved a few weeks ago and I still haven’t gotten through all of our moving boxes. I didn’t have a mixing bowl handy so I used my favorite coffee mug my husband got me last year when we traveled to Jackmaine Maine to mix up my sauce.

I added half a cup of brown sugar to the bottom of the mug.

I then added 8oz of soy sauce to the bottom of the mug and stirred well until all the sugar was mixed.

I added another half cup of brown sugar for a total of one cup used. I mixed well. I then added 4 tablespoons of jarred chopped garlic. Once stirred I added into the slow cooker.

Some recipes have shredded carrots. I didn’t have them precut and didn’t want to shred carrots myself so I tossed in about a half to three forths full bag of baby carrots I had in the fridge into the slow cooker.

Admittedly aside from the garlic I didn’t officially measure anything. I had half of a 16oz bag of brown sugar left over from another recipe. My soy sauce bottle was brand new so I used half. I still haven’t found my measuring cups…and even if I had them I don’t want more dishes to wash so eyeballing works week enough for me 😊

I let this cook all day in my slow cooker.

Once cooked you can serve this however you would like. On top of rice, with some stir fry veggies…straight out of the crackpot into your mouth… Anything works.

The leftovers are great too.

One of my favorite things to do with the leftover meat is to make a quesidilla. Use a spicy cheese and you get the sweet spicy combo. So yummy.
