Slow Cooker Fajita style chicken

My slow cooker is one of my best friends. I cook chicken in it often because my recipes are easy to adapt for my less food adventurous children.

This recipe will feed my semi large family over several meals. I like to repurpose my leftovers into new meals so I prefer to make a big batch… it also allows me to purchase the large family size pack of chicken without needing to repackage any of it.

Into my slow cooker I added 3 cut Vidalia onions . I gave the layer of onions a sprinkle of salt, cumin, chili powder, and garlic. You could also use a taco/fajita seasoning packet too.

On top of the seasoned onions I added my entire family sized package of chicken.

On top of the chicken I added 2 more cut onions and 3 bell peppers. I used the 3 multi pepper pack from Aldi that had 1 yellow 1 red and 1 orange but 3 of any kind you want would work.

I added another layer of the same seasonings to the top, covered and cooked on low all day ( probably about 6 to 7 hours)

I checked my meat to make sure it was at temperature then shredded the chicken right in the slow cooker.

My kids ate it just as is with some extra fruit and shredded cheese on the side. My husband and I had as is with some mango and avocado on the side.

Recipe total cost $24.34

Family sized pack of chicken $15.33.

All of my seasonings I already had in my pantry. If you needed to purchase them they all cost about $1.50 per jar adding $6 I costs. ( fortunately you will have the jars for lots of other future recipes)

We ate about one third of the recipe which would be about $ 8.12 ( I rounded up from $8.113). This feed 2 adults and 3 elementary aged children.
