This recipe is made with the leftover chicken from the slow cooker fajita style chicken . You could use any precooked chicken you have on hand
Into a pan I added about 3 cups of the leftover shredded chicken. I heated it up and served that my children with fruit, carrots, and shredded cheese. They weren’t sure they wanted it how I was preparing and honestly I was happy they were willing to eat chicken that wasn’t shaped as a Dinosaur so I didn’t fight them 😊
Once I plated my kids food ( I served it immediately so it didn’t get cold and I could then focus on the rest of the meal ) I added about half of a 10oz package of queso Blanco all chopped to the mix. I added half of a 16 Oz bag of mixed shredded cheddar cheese and more peppers and onions from the chicken fajitas. I mixed until the cheese was warm then added a small can of green chili’s. It could be considered an optional step to warm all the ingredients but I feel like whenever I haven’t warmed the ingredients in meals like this sometimes there are cold spots and for me that’s a big no thank you.
I then added enough chicken mixture to the bottom part of a tortilla and rolled.
Once I had them all assembled I added them to a frying pan. Make sure the oil has heated before added . Put seem side down. Cook for about 30 to second seconds until golden brown. Flip over and repeat.
Just a word of caution… be careful when adding the flautas to the oil…. it splatters. Could absolutely be user error but I have never manage to make a meal like this without the oil splattering. The flavor is so good I am willing to clean up the mess but there is a slight mess. I’m hoping to eventually perfect cooking with oil so this doesn’t happen but so far I have not mastered this skill.
I served with sour cream and some pineapple salsa that I needed to use up.can serve plain or with whatever you would like to dip in. Guacamole would be yummy but I didn’t have any ready.

Baby carrots 89 cents for 16oz bag. Used about 5 carrots ( they aren’t big fans yet)
Pineberries were about $4 for the package
Brings my total meal cost to $15.90
Fridge/ pantry items
Sour cream – used a few spoonfuls. Full jar costs $1.79
Oil – used enough to cover bottom of large frying pan . Full bottle costs $3.09
Pineapple salsa – used a few spoonfuls. Full jar costs $2.55
Aside from the oil splattering this recipe is really easy. It helps reduce food waste by using up leftover food while still making the meal feel like something new. While I don’t mind leftovers I appreciate a new take on a meal already cooked because then I don’t get bored and waste or end up ordering take out.
