This morning I was looking at some of the vegetables I had leftover from my CSA share and decided I needed to get cooking and come up with some different ways to use up my wonderful fresh produce. I made a few other things and on my cutting board was a spicy pepper, some onion, and some parsley. All the sudden I thought salsa! Only I had no fresh tomatoes. I looked in my pantry because I usually have some kind of canned tomatoes, and I was hoping to find some diced tomatoes. I found a can of fire roasted style tomatoes.. score! I knew I could turn this into something delicious really quickly.
What you need

1 can fire roasted style tomatoes
1/2 small red onion
1 small spicy pepper
small bunch parsley
Container to store salsa
Knife (I used a pairing knife)
Cutting Board
Directions:
Open can of tomatoes and place in container
Dice onion into small pieces. Add to container.
Dice Peppers into small pieces. Add to container.
Finely cut parsley. Add to container.
Stir.

You can certainly eat right away. However I recommend putting in into the refrigerator for a few hours to let the flavors blend.
You can use this salsa to top a variety of dishes. I enjoyed mine with chips.
